Expanded Discussion Topics:

  • The Okinawa Diet: Living to 100
The dietary guidelines recommend that we try to choose meals or snacks that are high in nutrients but lower in calories to reduce the risk of chronic disease. By this measure, the healthiest foods on the planet, the most nutrient dense, are vegetables, containing the most nutrient bang for our caloric buck. So, what would happen if a population centered their entire diet around vegetables? They might end up having among the longest lives in the world.

  • Whole Beets vs. Juice for Improving Athletic Performance
Nitrates, concentrated in green leafy vegetables and beets, underwent a great makeover a few years ago from inert substances to having profound effects on the power plants within all of our cells, reducing the oxygen cost during exercise—meaning we can bust out the same amount of work with less oxygen.

  • Coffee and Mortality
Do coffee drinkers live longer than non-coffee drinkers? Is it, “Wake up and smell the coffee,” or “Don’t wake up at all?” The largest study ever conducted on diet and health put that question to the test, examining the association between coffee drinking and subsequent mortality among hundreds of thousands of older men and women in the United States.

  • High Blood Pressure May Be a Choice
For the first 90% of our evolution, we ate diets containing less than a quarter teaspoon of salt a day, because for the first 90% of our evolution, we ate mostly plants. We went millions of years without salt shakers, and so our bodies evolved into salt-conserving machines, which served us well—until we discovered salt could be used to preserve foods.
